What is Meat Fondue?

Meat fondue, also known as Fondue Chinoise, or Chinese fondue, is Switzerland’s classic Christmas and New Year’s meal. This dish consists mainly of meats, vegetables, and delicious sauces cooked for 1–2 minutes by dipping in hot broth or oil. Making beef fondue at home is easy and fun!

Meat fondue can be made in two different ways. Fondue Bourguignonne (meat fondue in oil), the first type of meat fondue, is a dish made by frying cubed meat in hot oil. Fondue Chinoise is a type of fondue in which thinly sliced beef is dipped in broth and boiled.

Although the version made with oil was preferred in the past, nowadays fondue made with broth is preferred because it is both healthier and does not leave a heavy odor. Let’s take a look at this recipe made in broth.

Meat Fondue Recipe — Ingredients

1- For the broth;

  • 1 lt broth (it can also be obtained from bouillon)
  • 1 bay leaf
  • A pinch of thyme
  • Rosemary
  • 1 tablespoon of cognac (optional)

2- To soak in broth;

  • 200 g per person sliced meat as thin as bacon. (Best steak for fondue is tenderloin or beef fillet.)
  • Sliced carrots
  • Sliced mushroom
  • Cauliflower
  • Broccoli

3- For meat fondue sauces;

For the cocktail sauce;

  • 150 gr yoghurt
  • 40 gr mayonnaise
  • 40 gr ketchup
  • Very little lemon juice
  • Salt, pepper, red pepper

For the curry sauce;

  • 150 gr yoghurt
  • 25 gr mayonnaise
  • 1 banana
  • 1 small apple
  • 1 tablespoon of curry powder
  • Some lemon juice
  • Salt, pepper

For tartar sauce;

  • 150 gr yoghurt
  • 40 gr mayonnaise
  • 1 boiled egg
  • 3 pickled gherkins
  • 1 tablespoon of lemon juice
  • A pinch of sugar
  • Salt, pepper

How to Make Meat Fondue?

Meat fondue is made in 2 stages.

Broth;

  1. Boil the broth on low heat for about 1 hour so that the broth can get the taste of herbs.
  2. Before serving, you can add a spoonful of cognac.

Meat Fondue Sauces;

  1. You can prepare your sauces by mixing all ingredients and blending them.

How is Meat Fondue Served?

  • Put a fondue set in the center of the table like in the photo below.
  • Put fondue meats and other ingredients in separate plates.
  • If you don’t have a meat fondue set, put the broth in a pot and bring it to the table. Put a small spirit stove or a few candles under it.
  • In order for the meats to cook, the broth must be constantly hot.

What to Serve With Meat Fondue? Meat Fondue Sides

  • During serving, you can also serve pickled onions, pickled corn, and pickled cucumbers.

How to Eat Meat Fondue?

  • Bring the thinly sliced raw meats in rolls to the table.
  • Hold the meat with the tip of your fork. Dip your fork in the broth you put in the middle of the table and cook it for 1–2 minutes.
  • You can eat the meat by dipping it in sauces on the table.
  • Boil the vegetables beforehand and when you serve them on the table, dip them in the broth with your fork for 1–2 minutes and dip them in sauces according to preference.
